Hello friends!  Welcome to another wild and wonderful week!  Last week was the first week back after our holiday break and was great and went really smoothly 🙂 I loved having a nice long break, but I am kinda glad to be back and settling into a normal routine.  The fact that our week went so smoothly I owe (at least in part) to the #30daysofyoga challenge I started this week, follow my journey on Instagram .  I got the idea from a fantastic  Youtube Yoga channel I follow, called Yoga with Adriene (Check her out, you won’t be sorry!)   I have been Yoga fan for a while, but have never taken up a daily practice, claiming to not have time.  Well, since I started this challenge, I have been “forced” to carve out time for it in my day.  My yoga sessions have ranged anywhere from 10minutes to a full hour.   So some days it has only be a small amount of time for it, but its been wonderful and has given me some extra Peace and serenity this week.

Monday: Creamy Lemon and Basil Chicken with Roasted Cauliflower

Tuesday:  Tuna Burgers with Spinach Salad, recipe inspiration here with a few changes of course 😉

Wednesday: Saucy Roasted Ratatouille over pasta.  I know Eggplant is kinda a scary thing, but this recipes is easy and delicious!  Make a commitment to become more food adventurous in 2015! #moreadventure

Thursday:  Cajun black bean and rice with Turkey Sausage with Salad – Crockpot meal, this is our busy night, its nice to have something in the CP when we get home from soccer practice.  Remember, it is really helpful and simple pre-prep your CP meal the night before and have it in the fridge to just take out and turn on in the morning.

Friday: Honey glaze Chicken and Broccoli.  Easy friday night meal

Saturday: By the Seat of my pants.  Momma needs a night off! 😉

Sunday: Pork Roast with Vinegar smashed Potatoes  and glazed carrots recipe here (+a bit of ginger)

Salmon Cobb Salad

I am a sucker for a Cobb salad! I absolutely love the combination of fresh greens, crispy bacon, creamy cheese (especially if it’s blue cheese
