Here is the Menu for this week.  I hope you all are getting into the habit of planning your meals…it makes life easier, I promise!  Please check back for more recipes this week.

Monday – Cajun Black Beans and Rice with Turkey Sausage with Side salad

Tuesday : Lasagna with roasted cauliflower (I use frozen/thawed cauliflower, which is easy, cost effective and cooks in 1/2 the time)

Wednesday : Stuff Peppers with  Squash and Quinoa

Thursday : Shrimp Scampi with steamed broccoli

Friday : Breakfast for Dinner – Scrambled Eggs with Sausage, Pancakes and cut melon – Nothin’ Fancy

Saturday : Mexican Kale Salad (my version of this yummy salad) & Grilled cheese Sandwiches

Sunday : Chicken Enchiladas and mexi-green beans
