The Weekly Menu

It’s almost here, the Joyful Warrior #30in30 starts tomorrow!  I can’t wait, I hope it will be an inspiring, empowering and super awesome experience for everyone!   Check out the Joyful Warrior 30 days in 30 Days post for more details.  Many people have asked me about how best to post your challenge adventure.   I would love for you to post your pictures and videos directly to your Twitter, Instagram, or Facebook pages (or all) and tag me  and add the hashtags #Joyfulwarrior #30in30.  I want you to share your awesomeness with your own peeps, because When you shine your light, you give others permission to shine their’s!

In addition to the posting to your own profile I started a few groups to make connecting with fellow Joyful Warriors a little easier.  Check’em out

Finally….here is the Menu for this week!  Create an amazing Week friends!

Monday: Sweet Potato Coconut Curry from Food Faith Fitness, I will add  Shrimp and Garlic Roasted Broccoli on the side.   I saw this coconut curry recipe on Healthy Aperture and couldn’t resist!  I don’t have a pasta maker, so I will just cube the potato into small pieces.
Tuesday: Vegetable Quesadillas with Spinach Side Salad and hopefully some Mango Salsa left over from monday night.
Wednesday: Baked Chicken with Asian Broccoli Salad (from Gimme some Oven)
Thursday: Cilantro Lime Baked Tilapia with brown rice and Summer Squash with Peppers
Friday: Pizza Party! This is last day of School so we are going to celebrate the official start of summer!  Yay!
Saturday: Easy Peasy Tacos with tomato and avocado salad. It’s Saturday night and the livin’ is easy!
Sunday: Pork Roast in the Crockpot  with potatoes with Roasted Asparagus
