Weekly Menu: March 2 – 10

Weekly Menu Planning

Welcome to a new week friends.  Ours is going to be fun; my daughter turns six this week!  I am not sure how this much time has flown by,  but here we are! It has been an amazing six years, and I am grateful for every second!   Create something amazing this week!

What will your week contain?   Whatever it’s filled with be sure to create something amazing!

“Create the highest, grandest vision possible for your life, because you become what you believe” – Oprah Winfrey

Monday: Swedish Meatballs (new recipe found here) over rice and Roasted Broccoli.
Tuesday: Taco Soup with Side Spinach Salad, served with the Honey Dijon dressing from this recipe
Wednesday: Pasta de Savoy with Quinoa Fruit salad, had this on the menu last week but didn’t make it. Beside this meatless meal could use some protein
Thursday: Macaroni and Cheese with GF chicken strips and Roasted Broccoli and Cauliflower – It’s my daughters 6th Birthday, so she chose this for her birthday dinner 🙂
Friday: Pear and Gorgonzola Salad with boiled eggs and leftover chicken strips from Thursday night
Saturday: Easy Peasy Tacos with steamed peas and carrots.  Making Saturday night really easy!
Sunday: Stacked Enchilada Casserole.  Using this recipe with my Enchilada sauce.  Green Salad on the side and I wanted to try this Cilantro Lime Vinaigrette
