Last week was our Spring Break so we took the opportunity to explore nearby New Orleans, LA. #adventure  And I must say, NOLA is so AWESOME!  So much delicious food, amazing culture and interesting history.  We had an amazing trip! Some of the highlights were: went on a Paddleboat tour on the grand Mississippi,  had my palm read in the French Quarter, held an albino snake on Royal Street, was heckled for walking my baby in a stroller (during the day) on Bourbon Street, had a very moving experience at the Whitney Plantation, caught beads at the St Patties day parade and had at least one muffuletta a day and reignited my love for Red Beans and Rice. All in all, I would say it was a pretty stellar trip!

But we are back in the real world, and I am glad to be here!  I have a really full week of Wellness and Life Coaching client meetings, and I am so excited to get back to it.  I know I have found my passion because doing it brings me an amazing amount of joy and fulfillment! #lifebydesign #gifts

Monday:  Green Chili Chicken Wraps with steamed peas and carrots
Tuesday: Dill Chicken with Apple Dijon Salad
Wednesday: One Pot Pad Thai with Roasted Broccoli and Cauliflower
Thursday: Turkey Tacos with Spinach Salad
Friday: Pineapple Grilled Fish or Chicken with Grilled Zucchini and Squash – Found this on Pinterest, and it looks genius and delicious!  I can’t wait to try it!  I have fish or chicken here because I can’t decide which to do, guess I will go with what is on sale at the store 🙂
Saturday: Salmon with Creamy Dill sauce with roasted asparagus and side salad
Sunday: Coq a Chardonnay with Pear Gorgonzola Spinach Salad  – This is a new recipe, looks so delish and super easy 🙂  So try’n it out.
