Weekly Menu Planning Spring Flowers

Spring has sprung here in Austin, and I LOVE it!  Spring is truly my favorite time of year!  It is not too hot; there are beautiful flowers everywhere, and the sky becomes enormous and beautifully blue.  Maybe blue expanse sky phenomenon happens everywhere, I’m not sure, but all I know is, it just makes everything so beautiful and cheerful!

And for me, Beauty is so Inspiring!!

 

Monday: Oven Fajitas with Beef and Chicken – similar to this recipe.  I have made this type of recipe before and was a little disappointed, but I am giving it another shot because I have hankering for Fajitas.  I will also pre-prep everything Sunday to make prep quick and make sure I marinate the meat

Tuesday: Ole’ Sheppard Pie – we have softball practice this night, so I am going to put this in the crockpot instead of baking in the oven.  Modification: Make the meat sauce part, place in CP and top with mashed potatoes.  Put on low or even keep warm depending on how hot your crockpot runs.  This is a forgiving recipe, just don’t put it on high because the potatoes will turn into rubber

Wednesday: Spinach and Mushroom Quesadillas, recipe here   – This is a new recipe I haven’t tried before

Thursday: Simply Delish Baked Chicken with Salt and Vinegar Smashed Potatoes with Roasted Broccoli

Friday: Cilantro Lime Fish with a side of Rice and roasted squash and peppers

Saturday: Eatin’ at Mommas house 😉

Sunday: Apple Cheddar Mini Meatloaves  with Roasted Broccoli
