Weekly Menu Planning

Happy Rainy Sunday Everyone!  I am keeping it easy and simple this week, all simple I-have-made-a-million-times meals.  Sometimes we just need simple 🙂

I hope everyone saw my post from Friday about the #30day adventure I am going on in June.  It’s going to be a #30in30 online #strength&love fest where I will be committing to spending at least 10minutes doing something that strengths my body and spirit and I want you to join me! 30days in 30 days 2015

Monday: Swedish Meatballs over brown rice and roasted Broccoli and Cauliflower – Going to make a double batch Sunday (tonight) so Monday evening is easy and I have some to freeze for later.

Tuesday: Turkey Fajitas with spinach Salad

Wednesday: Pad Thai with snap peas on the side (new favorite in my house) – may add chicken or shrimp depending on how I am feeling

Thursday: Simply Baked Chicken with Baked Sweet Potato and Truffle Rosemary Asparagus

Friday: Breakfast for Dinner!  I love BF for dinner, it’s easy quick and delish! Bacon, eggs and Greeny Waffles

Saturday:  WE are having dinner with family, so its out of my hands…sometimes it’s so nice to not have to make decisions!

Sunday: Dill Chicken with Apple Dijon Salad – I will be using crushed rice chex for the chicken breading to keep it Gluten free
