Wow, yesterday was a full and super fun day! First we had my daughter’s third birthday Flamingo party (post to come!), which was great! Then our other daughter had her t-ball game, go Tincaps! Then Quinn and I had a much over-do mommy-daughter date, it was so great to have some one-on-one time with her. Life is good. 🙂
Today is a going to be a pretty typical Sunday except for the fact that I will be (mostly mentally) preparing for my appearance on Good Day Austin tomorrow morning (May 4) at 9:45ish on the Make it Monday segment. I am super excited and would love for you to tune in if you can!

Monday: Chicken Soup with Drop Dumplings – my gals both had colds last week and are still recovering, and I don’t know anything better for a cold than Chicken Soup! I will attempt to make the drop dumplings with GF flour.
Tuesday: Pasta de Savoy (GF pasta) with Chicken with Roasted Broccoli and Cauliflower
Wednesday: Pear and Gorgonzola Salad with Soft boiled eggs and Chickpeas (for Protein)
Thursday: Chicken and Black bean Burrito bowl – I am trying this New recipe from the blog 24carrotlife Looks so yummy and super easy!
Friday: Gluten Free Crockpot Green Chili Mac and Cheese – I mean, come-on: crockpot + mac&cheese + Friday night = OH-AH! Tryin’ this new recipe curtsy of Cooter Crunch blog
Saturday: Vegetable Quesadilla with sliced avocado (of course!)
Sunday: Happy Mother’s day to all you Mommas out there! My mom and I are always treated to Brunch by my dad and my Husband (LOVE brunch!). So I wanted to include this great post by PocketChangeGormet.com with some great Mother’s Day Brunch Ideas. I hope you all have a fabulous day!
