Fall Weekly Menu Planning

Hello, from a chilly Austin, Texas!  We have had a wonderfully brisk burst of cold weather the past couple days, with  lows in the 30s and highs in the 40s.  Which is actually pretty cold for us and I am loving it! I love when the weather changes and this colder weather really gets me in the Thanksgiving mood!  And with Thanksgiving less than 2 weeks away (EEK!), my mom and I have been busy planning the menu, finalizing the guest list and planning the table decor (my mom’s forte).  I will even start doing some Thanksgiving food prep and baking today, to make Thanksgiving go smoothly 🙂 But even though I have Thanksgiving prep fully on the brain, we still need to eat, I  choose some pretty easy and simple meals for this week,  I hope you like them!

 

Monday: Cajun Black Bean and Rice with Sausage 

Tuesday : Creamy Lemon and Basil Chicken  with Roasted Broccoli (similar to Broccoli)

Wednesday: Tomato Basil Soup with  Fig Grilled Cheese Sandwich

Thursday:  Dill Chicken with Apple Dijon Salad

Friday: Greek Turkey burgers with fresh cut fruit

Saturday: Lasagna Soup :  New recipe:  I got the idea from this recipe , but I will use my Red Sauce recipe as the soup base, not because this recipe doesn’t look delicious, its just I can to make my sauce like in my sleep and exactly the ease I prefer on the weekend! 🙂

Sunday:  Simple Pork Roast with brown rice and a side of Turnips
