Weekly Menu Oct 27 – Nov 2

I’m sorry…there must be some mistake.  How can it possibly be the end of October already? This whole thing (school year, the fall, life) is going way too fast!

Well, this will be a really fun week!  Hallows eve is this friday and we are all excited!  Well, I am actually not a big Halloween fan because of the  ghouls, ghosts,  goblins and scary stuff, but I do love the opportunity for a good party!  And because we are seriously lucky and,  happened to live in the best neighborhood in the world, with the best neighbors ever, who seriously know how to have fun!  Fun in this case means dressing in the traditional Oktoberfest fare, complete with Dirndls, Lederhosen and enjoying the delicious German delicacies such as  bratwursts, sauerkraut, pretzels and spaetzle and beer (of course).  That’s right, we are going to be enjoying a little bit of Bavaria here in Texas and I am super excited!  And the kids are pretty stoked about their Trick or Treating adventure too!  With their costumes at the ready, (one glow in the dark skeleton and 2 little Indian Princesses), having been check and tried on 2 dozen times, we are all ready!

Another thing I appreciate about Halloween, is that it marks the start of the Holiday season, which is definitely my FAVORITE time of the year!  Thanksgiving is a big celebration for the friends and family in my world, so I am excited to start planning that (if I am honest, this has already begun).  Yay!

But for now, I will focus about the week ahead 🙂 It’s going to be full and fantastic!   I hope yours is too!

 

Monday:  Deconstructed Eggplant Parmesan with Roasted Broccoli

Tuesday:  Tuscan Kale with Sausage and Pasta and a side Salad

Wednesday:  Southwestern Chicken Stew:  Recipe coming!

Thursday:  Fish Tacos, made with my Cilantro Lime baked fish.  These were on the menu for last week and we actually didn’t eat them so they are reappearing today

Friday: Bavarian Pot Roast and Spaetzle (recipe to come) plus other delish German fare for our Halloween potluck  🙂   Kostlich!

Saturday:  Breakfast for Dinner, Yay!  Chai Apple Pancakes with bacon and eggs and fruit on the side

Sunday:  Lemony Chicken with Asparagus on a bed of leafy greens
