And on to a new week…why do the weekends always seem so short? 🙂 Our weekend has been full of rainy weather (much needed), hanging out with friends and lots of Halloween preparation!   And now we looking forward to this new full and fun week!  We are especially excited about friday this week, because my children’s school is putting on a color run…and whole doesn’t love a color run! Yay!

Monday: Shepherd’s Pie and Roasted Brussels Sprouts

Tuesday: Lemony Chicken with Side Salad

Wednesday : Deconstructed Eggplant Parmesan with Steamed Broccoli

Thursday: Smothered Pork Chops and Mashed Potatoes and Roasted Cauliflower

Friday:  Pizza – My Kid’s School is having a Color Run, so we are keeping it easy!

Saturday:  Cajun Baked Fish with Rice and Steamed Peas and Carrots

Sunday: Meatloaf with Salt and Vinegar Smashed Potatoes
