Weekly Menu : October 6-12

I love fall, the weather is starting to get cooler, the air starts to smell crisp, we have started planning for Halloween and Thanksgiving (one of my fav-or-ite holidays!), pumpkins are everywhere…I could go on and on, I just love it!  Also, the food it so yummy… winter squashes, brussel sprouts, turnips and of course the many stews and soups I can prepare…ummmm life is good!  Only problem, I don’t have many (or any) of these falley recipes on my blog yet (eek, sorry!) sooo, I will work on that and in the meantime, this week’s Menu is full of some yummy oldies but goodies and links to other delicious recipes from other bloggers.  Thanks for sticking with my friends 🙂

Monday: Open faced turkey burgers (just burger from recipe – feta cheese) with melted swiss cheese and Veggie couscous

Tuesday:  Shrimp Scampi and Steamed Lemon Parmesan Broccoli (3cups Steamed broccoli tossed in 2 tbsp lemon juice, salt/pepper and Parm sprinkled on top)

Wednesday: Lentil Chili with Side Salad

Thursday: Garlic Baked Fish with Salt and Vinegar Smashed potatoes (recipe inspiration here)

Friday: Order out Pizza – its a busy week and I will need a break!

Saturday: Turkey Fajitas with baby carrots and Salad

Sunday: Stuffed Shells – Actually will double this recipe to freeze one so I can have it in the freezer for the very full/busy holiday season…always good to be prepared!

 

Have a good week friends and enjoy the pumpkin everything…I know I will! Going to try a pumpkin scone recipe this week…I’m not much of a baker, so I’ll let you know how they turn out. 😉
