Meal planning made easy

School has started and we are excited about this new year with all it’s newness and possibilities! The school year fun, but it also means new time challenges with after school activities and other new evening commitments.  Because of these new changes, it  means extra careful planning to account for functions, practices, meetings…etc.  It is important to me that even with a busy new schedule and kids activities, that we still make room and prioritize healthy meals and family mealtimes on the regular.  Yes, some days are easier than others, but I still try my best on a regular basis. 🙂

So, what do I do to make my life easier on these busy days?  Well, I couple different things,  I make a crockpot for at least 1 of my weeknight meals (especially if I have a set sports practice or meeting) and also, I will prep and make meals ahead for the coming week.  So, many times I will make or at least prep my monday meal on sunday, that way I have monday ready to go into the oven early without any prep.  That also allows me (if needed) to prep or fully make the meal for Tuesday (or another day that week) while Monday’s dinner is cooking in the oven.  I will explain more about this technique in a future post , so please stay tuned.

Monday:  Turkey Spaghetti made with my Italian Red Sauce (previously frozen)

Tuesday: Mexican Mac and Cheese with Steamed Broccoli

Wednesday: Pork Tacos with Steamed Green Peas

Thursday: One Pot Zucchini Mushroom Pasta (new recipe, inspiration here)

Friday: Turkey Burgers with fries and baby carrots

Saturday: Broccoli and Chicken Twice baked potatoes (new recipe, inspiration here)

Sunday: Turkey Fajitas and Tossed Salad with avocado and tomatoes
