Oh man, last week was a tough. It darn near kil’t me.
But thank goodness, I survived and am here to enjoy another day! We had a full week, school+ kids activities+work meetings+school meetings = eye bags, a messy house and tiny bit o’ crazy. Really, I know this is the good stuff and truly appreciate our full, rich life. 🙂 That being said, I sure was glad when friday rolled around because we were able to relax and start our fun weekend. Saturday, I took the time to get in a good long Yoga session and the Hubs and I went to The Kings of Leon Concert (A-MAZ-ING!)
So, on to our next fun filled week!
Monday: DIll Chicken with Apple Dijon Salad

Wednesday: Honey Asian Chicken with Broccoli over rice
Thursday: Shrimp Scampi
Friday: Celebrating a Friend’s Birthday…Pizza Par-tay! 😉

Sunday: Pork Enchiladas with black beans: using my pork taco recipe and my enchilada sauce (that I still have frozen)
