Hello friends, welcome to a new week! It will be a beautiful, full week 🙂 Did you know that fall officially starts this week? The fall equinox is tomorrow on Monday September 22. I love fall and all the wonderful things it brings, like cooler weather, soups, stews, the start of the Holiday season and of course an over-abundance of pumpkin recipes (well, according to Pinterest this has already started). I love it!

Monday: Deconstructed Eggplant Parmesan with Pasta and steamed broccoli (A crockpot recipe, seems appropriate on the first day of fall!)
Tuesday: Easy Peasy Tacos and Avocado, Cucumber and Tomato salad
Wednesday: Lemony Chicken with Asparagus and side Salad
Thursday: Cilantro Lime Baked Fish with Brown Rice and Mexi Roasted Cauliflower
Friday: Daddy’s Choice Dinner. Daddy will be in charge of dinner because I will be away preparing for the Spa Girl Tri tomorrow! Wish me luck 🙂
Saturday: Spiced Mexican Tuna Steaks (new recipe: inspiration here). I got some gorgeous Tuna Steaks on sale…months ago. I have been cleaning out my freezer and have made a plan to use all of the things from the back. Oh, what a glamourous life I lead! 😉
Sunday: Dill Chicken with Apple Dijon Salad – This is truly one of my new favorites! I hope I have extra, so I can have it for lunch. Also I may make some Veggie Couscous to have in the fridge to mix with these left overs…it’s a delish combination!
