Instant Pot Turkey & Quinoa Mexican Protein Power Bowl

So, a few weeks ago I got an instant pot. Best. Decision. Ever.

And I made this recipe, that every night.  It is a mix between this Stove Top Mexican Black Bean Skillet and this Protein Power Bowl. It’s really a simple, healthy recipe, that my family loves, so I was thrilled when it turned out so well using the instant pot.

Before I move on to the recipe…I want to rave (in a good way) for a second about how much I am loving the Instant Pot and let me tell you a few of my favorite features…

  1. The Saute feature – I don’t have any other dishes dirty, I simply just throw in some oil, and the vegetables or whatever that I want to saute and voila, done! No extra clean love. #love
  2. The Pressure cooking feature – I made brown rice the other day in 12minutes…I know it doesn’t seem like much, cooking rice in 12 minutes instead of 40min = game changer
  3. Easy cleanup – The cooking pot has been super easy to clean so far, the food never gets stuck like it does in a crockpot. And every minute LESS I have to spend doing the dishes, the more in love I am.

Instant Pot Turkey & Quinoa Mexican Protein Power Bowl

Ingredients
  • 1lb ground turkey
  • 2 TBSp olive oil
  • 1cup diced onions
  • 3 cloves garlic
  • ½ cup diced bell peppers (I used Red)
  • 1 can diced tomatoes
  • 1can black beans
  • 1cup diced zucchini
  • 1cup quinoa
  • 1¾ cups chicken broth
  • 2 tsp dried cumin
  • 2-3 tsp chili powder
  • Pinch or 2 of course sea salt - Per taste
  • 2 Tbsp fresh Cilantro chopped
  • 4-5 cups of Spinach (depending on eating)
  • Optional toppings cheese and avocado
Instructions
  1. Dice Onion, bell peppers, and zucchini. Mince garlic.
  2. Rinse Quinoa in cold running water.
  3. Saute all veggies in the saute feature and cook for about 5 minutes until they begin to soften. Add ground turkey. Brown.
  4. Then add the quinoa and chicken broth. Turn on the rice setting and cook.
  5. When the time is up, quick release the steam (or allow steam to decompress on its own). When all the steam is released, remove the lid and stir in Cilantro and it's ready to eat.
  6. Arrange a bed of spinach and top with Turkey and Quinoa mixture, then sprinkle with cheese and avocado. Enjoy!
