Summer Cobb Salad

Who’s in the mood for a big salad?

I’m ALWAYS in the mood for a big salad, and The Cobb is my favorite! 

This is a delightful twist on the cobb salad that’s perfect for summertime! It’s a cooling balance to the summer heat with sweet strawberries, a happy spring mix, crunchy sweet corn, and a tangy cilantro vinaigrette. Then rounded out by grilled chicken, salty bacon, and subtle creamy of goat cheese. It’s superb!

And she is rocking superb nutrition too!

Strawberries – packed with vitamin C, fiber, potassium, and antioxidants

Avocado – Healthy monounsaturated fats, vitamins C, E, K, B vitamins, magnesium, and potassium.

Chicken – High in protein and a good source of iron and zinc, as well as Vitamins B3, B6, B7 and B12

Cilanrto – I love this herb! It’s so delicious. Cilantro is rich in antioxidants and bioactive that help prevent tumor formation, support the liver’s detoxification pathways, and boost digestion.

Summer Cobb Salad

Summer Cobb Salad

Prep Time 10 minutes
Cook Time 30 minutes
Servings 6

Ingredients
  

  • 6 cup spring mix
  • 6 slices bacon cooked
  • 4 eggs hard boiled
  • 2 cobs grilled corn (corn sliced off)
  • 2 avocado sliced
  • 2 cups strawberries (sliced)
  • 4 oz goat cheese (crumbled)
  • Salt and Pepper to Taste

Grilled Chicken

  • 1 lb chicken breast
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp pepper

Dressing

  • 1 large bunch cilantrol
  • 1/2 cup olive oil
  • 2 tbsp white wine vinegar
  • 2 cloves garlic
  • 1 tsp sea salt or kosher salt
  • 1/2 tsp red pepper flakes
  • water as needed

Instructions
 

  • Grill Chicken and corn
  •  Cook bacon, chop
  • Put dressing ingredients in a high-power blender
  •  Place spring mix in a large bowl
  • Arrange the rest of the ingredients on top of the spring mix
  • Add Dressing as desired
  • Enjoy!

Notes

You can substitute lemon juice or white vinegar for the white wine vinegar.  It's just as yummy!
