Hello,  happy Mid-Month Friends!  I hope everyone is getting their last bit of summer fun in before the craziness of the school year is upon us!  I know we are trying!

Here is the menu for this week, Hope you enjoy it!

Monday: Fajita Rice Casserole and Spicy Green Beans- made using leftover Fajitas from a dinner out

Tuesday: Thai Cashew Coconut Rice with Ginger Peanut Sauce and Shrimp – New recipe: inspiration here 

Wednesday: Chicken Piccata with Parmesan Roasted Cauliflower

Thursday: Apple Cheddar Mini-Turkey Meatloaves with Ginger Sweet Potatoes and Steamed Broccoli

Friday: Homemade Chicken Tenders and Apple slices

Saturday: Leftovers or Grilled Turkey and Cheese Sandwiches –  uncertain about the leftover situation so, its always good to have a backup!

Sunday: Beef Enchilada Casserole with Summer Squash
