Simply Roasted Cauliflower

Roasted cauliflower is one of my latest food obsessions, and honestly, I don’t see that changing anytime soon. It’s one of those vegetables that somehow manages to be delicious, simple, versatile, and super healthy all at the same time. When roasted, cauliflower gets tender on the inside with crispy, caramelized edges, which makes it a hit even with people who “don’t like vegetables.” You can keep it basic with olive oil and salt, or dress it up with spices, herbs, or a squeeze of lemon, it plays well with just about everything.

Cauliflower is part of the cruciferous vegetable family, along with broccoli, cabbage, Brussels sprouts, and kale. These veggies are nutritional powerhouses. Cauliflower provides important vitamins and minerals like vitamin A, folate, magnesium, and potassium, all of which support things like energy production, muscle function, and overall cellular health. It’s also naturally high in fiber, which helps keep digestion moving and supports a healthy gut.

One of the biggest reasons I love cruciferous vegetables is their phytochemical content. These plant compounds help support immune function, reduce oxidative stress, and nourish our gut bacteria, and you know I’m always rooting for those little guys. A diverse gut microbiome is linked to better digestion, improved immunity, and even more balanced mood and energy levels.

Detoxification is a hot topic right now, and while your body already has built-in detox systems, certain foods can absolutely support them. Cruciferous vegetables contain compounds that help the liver, kidneys, and intestines do their jobs more efficiently, assisting the body in processing and eliminating both metabolic and environmental toxins. This is one reason these veggies are often associated with anti-inflammatory diets and disease prevention.

Bottom line: cruciferous veggies are really, really good for you, and roasting cauliflower is one of the easiest (and tastiest) ways to eat more of them

Love Roasting Cauliflower!

I have always liked cauliflower, but roasting it brings out an amazingly yummy flavor that I just LOVE. This recipe is really simple, using only five ingredients, and can easily be adapted to complement any cuisine.

I start with a bag of frozen cauliflower florets. I love frozen vegetables because they are convenient, affordable, and often retain their nutritional value better than some fresh vegetables, given the time that can pass between harvest and grocery store shelves.

I line a cookie sheet with a silicone baking mat. I love these mats because they work like parchment paper but are reusable, which means less waste. If you don’t have one, parchment paper or simply oiling a cookie sheet works just fine. Place the still-frozen cauliflower on the mat and add a pinch of coarse sea salt and a liberal amount of fresh ground black pepper.

Next, add 1–2 tablespoons of extra virgin olive oil.  You can also use Unrefined coconut oil or avocado oil are both healthy choices. Then add about 2 tablespoons to 1/3 cup of diced onion. The onions get fantastically caramelized in the oven, though this step is optional if you’re not a fan. Toss everything thoroughly to ensure the cauliflower is evenly coated with oil and seasoning.

Preheat your oven to 400°F and bake the cauliflower for 20–30 minutes. Halfway through, gently toss and turn the cauliflower to prevent sticking or burning and to ensure all sides brown evenly.

When the cauliflower is golden brown, it’s ready! This is such an easy and forgiving side dish. I usually throw it in the oven while preparing my main dish and remove it at the same time it always turns out perfectly.

Here are a few variations I have tried (just a few of the countless possibilities):

  • Italian twist: Add Parmesan cheese and garlic

  • Mexican flair: Add cumin, lime, and coriander

  • Thai-inspired: Add a splash of soy sauce, lime, and fresh cilantro

  • 2 tablespoons EVOO or preferred oil
  • ½ teaspoon coarse sea salt good-sized pinch

  • 2 tablespoons–1/3 cup sweet onion diced

Method
 

  1. Preheat oven to 400°F.
  2. Place frozen cauliflower on a lined baking sheet.
  3. Add salt, pepper, oil, and onion. Toss to coat evenly.
  4. Bake for 20–30 minutes, tossing halfway through, until golden brown.
  5. Enjoy as is or try one of the suggested variations!
