Hello!

We have had a busy weekend, I participated in the Spa Girl Tri yesterday, which as wonderfully fun and so inspiring!  It is so inspiring being with 1500 woman who are pushing themselves, trying their best and just being fabulous!  I have so much more to say about this event and how awesome it was, but I can’t fit it all in here, so I will just have to write a full post about it,  so please stay tuned!  So for now, here I am back to the real world 🙂

Here is the menu for this week.  It has a few new recipes and some oldies but goodies.  I hope you enjoy them!

Monday: Broccoli Bacon Quiche with Spinach Salad

Tuesday: Turkey and Rice with Roasted Vegetables

Wednesday: Zucchini Tetrazzini with Summer Squash

Thursday: Chicken Tortilla Soup with a side of Roasted Broccoli

Friday: Personal Subs:  It’s friday and I want something easy.  So I will have some wholewheat subs and lunch meat different cheeses, fixins or meatballs.  Everyone chooses there own sub combo.  Its fun and easy!  I also have fresh cut fruit and veggies for the side.

Saturday:  Healthy Southwest Pizza – New recipe found here.  Looks so YUMMY!

Sunday: Mushroom Pork Chops with Roasted Brussel Sprouts.  – Recipes to come 🙂
