Mexican Corn

Last week published a the recipe for Mexican Corn and Grilled Chicken tacos, which are delicious!  But what makes them so super Yum, is the Mexican corn…so I thought the Mexican Corn recipe deserved it’s very own post!

So here it is!

Mexican Corn

Ingredients
  • 1 package frozen corn
  • ½ cup diced onion
  • 1 bell pepper, diced
  • 1 clove garlic
  • 1 tsp cumin
  • 1 tsp Chili Power
  • Salt and pepper to taste
  • 1-2Tsbp Olive Oil
  • 2 Tbsp Mayonnaise
  • 2 Tbsp Cilantro
  • ½ Lime
Instructions
  1. In a large skillet place diced onion and bell pepper with olive oil and spices.
  2. When onions and pepper are tender, add frozen corn and cook through, for about 10 minutes
  3. Remove the corn from the heat and toss with minced cilantro, Mayonnaise, and Lime.
