Pumpkin Pie Smoothie

Pumpkin, pumpkin everywhere! And I love it! That’s because not only is pumpkin delicious, but it is also really nutritious. Pumpkin is high in antioxidants like Vitamin A, Vitamin C and Vitamin E, and in minerals like copper, calcium and phosphorus. It is also a really good source of B vitamins like folate and B6, which promote healthy cell growth – and that decreases cancer risk and helps pregnant women grow healthy babies.

Also, the bright orange color of pumpkin is created by beta carotene, which among other things helps promote a healthy and robust immune system. And that is much-needed as we roll into cold and flu season!

Pumpkin Pie Smoothie

Ingredients

  • 1/2 cup greek yogurt
  • 2/3 cup pumpkin puree
  • 1/2 cup coconut milk  (can use your favorite milk)
  • 1 banana (fresh or frozen)
  • 2 Tbsp real  Maple Syrup
  • 1 tsp vanilla extract
  • 1/4 tap (heaping) pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1 cup ice

Directions:

  1. Add everything to a blender and blend and  Enjoy!
