This is one of those recipes that came together almost by accident. I was cooking salmon, standing in my kitchen, and instead of following a plan, I just started grabbing spices that sounded good. Sage felt right. Oregano felt right. Red onion and garlic always feel right. I crossed my fingers, slid it into the oven, and hoped for the best.

And wow. It was so good. Like unexpectedly, make it again immediately good.
