Spinach Pesto

Ok, ya’ll know I love simple, but I also love delicious and healthy…well then this sauce is the perfect recipe trifecta!

Making a Pesto from scratch may seem intimidating, but they really are super easy and take really no time at all! They are also perfect for vegan or vegetarian recipes because they are made with nuts to increase the protein and micronutrient content of your meatless meal.

Spinach Pesto

Simple and delicious sauce you can use on everything!
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings: 6

Ingredients
  

  • 2 cups fresh basil
  • 4 cups fresh spinach
  • 1/3 cup Olive oil more may be added if needed
  • 1/4 cup almonds
  • 1/4 parmesan cheese can be omitted for vegan
  • 1/2 lemon or 1/4cup lemon juice
  • Pinch or two of Sea Salt
  • Generous Ground black pepper

Method
 

  1. Put all the ingredients into a blender and blenderize.
  2. Scrape sides as you every once in awhile.
  3. Toss with favorite pasta or add to favorite dish.
  4. Enjoy!
