What’s on The Menu for this week…

Happy Funday everyone! Today is a big day! First of all, today is Father’s Day!  And I would like to take this oppurtunity to  congratulate myself on picking the absolute, my wonderful, greatest, most caring, generous and overall most amazing daddies  for my kiddos ever!!!!!! 😉  Thanks Andy, for being soooooo awesome on the regular! I love you so much and am grateful for you every day!

Also, Happy Summer Everyone!  Today is  June 21, which is  the summer solstice and marks the official start of summer! Hooray!  So bring on the watermelon, sunshine and water fun! Ok, so yes, I know we have already been partaking in all these things , but who doesn’t love another reason to celebrate!

Monday: One Pot Pad Thai with Roasted Broccoli

Tuesday: Lemony Chicken with Asparagus 

Wednesday: Deconstructed Eggplant Parmesan with Pasta and Spinach and tomato salad

Thursday: Turkey Fajitas with Corn tortillas and Roasted Sweet potatoes and corn

Friday: Vegan Curry Noodles from Delish Knowledge.  I have been crazy about curries lately, so when I saw this I had to try it!  I will be leaving out the tempeh and may add a few more veggies (I know she said not to…), so I don’t have to make some on the side…it is Friday evening after all!

Saturday: We will be at a Family Reunion. So I am sure watermelon, brisket and potato salad will be involved. 🙂

Sunday: Lentil Chili. We will have had a really busy weekend, so I am wanting something that can Cook on its own all day in the Crockpot
