Wow, March already!? Where is all the time going? I love that Spring is springing but can’t believe it’s here! Spring actually my favorite time of year, so I welcome it 🙂
We are headed into a fairly normal week and an easy weekend, which is always nice!

Monday: Sweet Potatoes, Corn, and Bean Enchiladas – saw these on Pinterest and have to try them! My use my own Enchilada sauce, still have some in the freezer 🙂
Tuesday: Turkey and Rice with Roasted Vegetables and Spinach Salad on the side
Wednesday: One Pot Pad Thai with Shrimp and Roasted Broccoli
Thursday: Green Chili Chicken Wraps (Gluten free wraps) with Sriracha Lime Brussels Sprouts
Friday: Breakfast for Dinner: Bacon, eggs, Pancakes and cut up fruit.
Saturday: Mini Personal Pizzas – Working on making a gluten free pizza from scratch. I will be using this recipe as a guide. I will let you know how it goes!
Sunday: Smothered Pork Chops with Quinoa Fruit Salad (this another Pinterest find that sounds amazing)
P.s. I am not sure if ya’ll noticed, but we have been eating Gluten Free dinners for the past month or so. We have embarked on a “Gluten Free lifestyle” to help one of my children. I have been pleasantly surprised at how simple the transition has been with a few small changes. 🙂
