Hummus Crusted Chicken with Vegetables

 

Ever get tired of plain ole’ chicken?

Well, then do I have something special for you!  This delicious simple and chicken recipe is so yummy and super easy too…and you cook the vegetable right there in the pan…so clean up is super easy too!

This dish is super simple and quick, but delicious enough for a simple weeknight or for when friends come over for dinner!

Hummus Crusted Chicken with Vegetables

Ingredients

  • 4 boneless, skinless chicken breast
  • salt and pepper to taste
  •  1 zucchini, diced
  • 1 yellow squash, diced
  • 1 Red bell pepper Dice
  • 1 ½ cup red onion diced
  • 4 Tbsp hummus
  • 1 Tbsp. olive oil
  • 2 lemon
  • 1 tsp. paprika
  • 1Tbsp Parsley
  • 2 Cloves Garlic
  • Butter(greasing pan)

DIRECTIONS:

  1. Preheat oven to 450 degrees.
  2. Dice Zucchini, squash and Red Bell Pepper. Place in 8×11 baking dish.
  3. Toss with Olive oil, Salt and Pepper
  4. Place chicken breasts ontop of the vegetables sprinkle salt and pepper. Spread about 1 tbsp hummus on each chicken breast. Then squeeze the juice of two lemons on chicken and vegetables.
  5. Place in oven and bake for 25-35 minutes until the chicken is cooked through (165 degrees) and the vegetables are tender. Serve immediately.
