Spinach and Red Pepper Mini Frittatas

Breakfast is the most important meal of the day,  but I think it’s actually  kinda hard to find healthy nutritious options.  That is why I love these little mini frittatas, they are healthy and delicious and really pretty simple to make.

As you can see, you can make a bunch of these little beauties and then reheat them individually each morning before you head out the door.

These are a great breakfast option because,  full of veggies and protein, so they are very filling and will keep you full and satisfied all morning.

Spinach and Red Pepper Mini Frittatas

Ingredients
  • 6 eggs
  • 2 cups fresh spinach
  • ½ Red bell pepper (about ½cup diced)
  • 2 Tbsp. Chives
  • ½ cup cheddar cheese (optional)
  • ½ cup almond milk (any milk will do)
  • Salt and Pepper to taste
Instructions
  1. Chop spinach and chives into small pieces.
  2. In a large mixing bowl crack the eggs.
  3. Add Spinach, chives, red bell peppers, salt and pepper and (optional) cheddar cheese, mix well to combine.
  4. Add milk and fold in.
  5. Grease a Muffin tin generously with oil and fill each cup with egg mixture. (makes about 10 muffin Size frittatas)
  6. Enjo
